CRUD and field-level security (FLS) are the object and field permissions that already hide data in the Salesforce UI. Apex applies those same permissions when database operations run in user mode, so controller code cannot query or write fields the running user is not allowed to access. In API version 67.0 and later user mode is the default; you set system mode only when you intend to ignore the current user's FLS and object permissions.
