SOQL is Salesforce Object Query Language: a SQL-like SELECT against the database when you already know which object and fields to read. SOSL is Salesforce Object Search Language: a text search against search indexes when you need to find a term across objects or fields, including objects that are not related. In Apex you wrap either statement in square brackets, but they return different types, so you choose based on where the data lives and what you must retrieve.
