An opportunity price book is the collection of products and list prices a sales rep uses on a specific deal. Opportunity products are the line items on that deal: each has a quantity and a sales price that starts from the list price in the chosen price book. The price book is chosen when the first product is added, and a quote created from the opportunity uses that same price book if one is already selected.
