Forecast categories place each opportunity into a sales-cycle bucket so Salesforce can roll expected amounts into Pipeline, Best Case, Commit, or Closed, or leave the deal out as Omitted. The category comes from a mapping on the opportunity Stage picklist, and changing the stage also changes the probability and the category. Admins maintain those mappings, can let owners override the category, and can rename categories or add Most Likely in Lightning Experience.
