A flow screen is assembled from screen components, the same way a Lightning record page is assembled from page components. Custom Lightning components, Aura or Lightning web components, let you add your own UI so a Screen Flow can show tables, branded headers, custom navigation, or other interactions the built-in components cannot. You install them from AppExchange or have a developer build them, then place them on a screen in Flow Builder; they only work when users run the flow in Lightning runtime.
