Historical trending reports (also called historical tracking reports) show how tracked field values changed across a few past snapshot dates, instead of showing only how the record looks today. Salesforce keeps that history for the previous three months plus the current month, and you read it through a special custom report type that you can chart and place on dashboards. You enable the feature on specific objects in Setup, choose which fields to track, then build the report in Report Builder.
