A production deployment is all-or-nothing at the transaction layer: if it fails or is canceled, Salesforce rolls the work back and the org stays as it was. Once a deployment succeeds, the changes are committed and that deployment cannot be rolled back. The recovery path after a successful production deploy is a backup of the target org’s metadata and data taken before you start, so you can restore the previous state if you need to.
