The role hierarchy opens Salesforce record access upward so people in higher roles automatically see records that users below them own or have been given. Organization-wide defaults lock down records a user does not own; the hierarchy then grants managers that visibility without extra sharing rules. Each role is a level of data access, not a job title, so the hierarchy does not have to match the company org chart.
