Classic Approval Processes and Flow Approval Processes are two Salesforce ways to send a record through reviewers. Classic processes are built in Setup for one object and typically start from a Submit for Approval button. Flow Approval Processes are a newer Flow Builder alternative that can start when a record is saved, branch with decisions, and handle multilevel, multiuser, and multisystem reviews.
