A roll-up summary field stores a calculated value on a parent (master) record using related child (detail) records. Once a field is referenced in that roll-up definition, Salesforce will not let you delete it, because the calculation still depends on the field remaining in place. Check references before you delete, and wait out any background roll-up job that is already updating a field.
