A lookup or master-detail field is the pointer that ties a record on one object to a record on another. Deleting that field is a custom-field delete: Salesforce keeps the field and its data restorable for up to 15 days, and it blocks the delete if another field still references it. The relationship type then decides what happens when the related record is deleted. Master-detail always removes the children with the parent, while lookup lets you clear the pointer, block the delete, or cascade-delete the children.
