A record-triggered flow watches one object and runs in the background when a record of that object is created, updated, or deleted. In the Start element you pick that object, the create/update/delete event, and then entry conditions so the flow runs only for the records you care about. Those Start choices decide when the flow runs and whether Salesforce can schedule paths from the Start element.
