Standard profiles come with every Salesforce org, but you can change only a few settings on them, not their permissions. To customize access beyond those limits, you clone a standard profile into a custom profile and then edit that copy. Prefer assigning Minimum Access - Salesforce, or a clone of it when you must change its defaults, and grant extra access with permission sets and permission set groups instead of creating a profile for every job.
