Grant Access Using Hierarchies opens record access upward through the role and territory hierarchy, the tree of roles that sits above users in Salesforce. People in higher roles automatically see records that people below them own or that have already been shared with those people, so managers get team visibility without extra sharing rules. You can turn the setting off only for custom objects; for most standard objects it stays on and cannot be changed.
