Flow type answers two questions: what starts the automation, and whether a person stays in the loop. Screen flows walk someone through a form; record-triggered flows fire by themselves when a record is created, updated, or deleted; autolaunched flows (no trigger) wait until a button, another flow, Apex, or an API starts them and then finish in the background. Choose the type from those start conditions first, because the type also decides which elements you can add and how you can place the flow.
