A lookup is a loose link between two records. A master-detail relationship is a tight parent-child bond: the parent controls sharing, the relationship field is required, and deleting the parent deletes the children. Salesforce lets you convert a custom field from one relationship type to the other instead of deleting it, but only when the data and related features still fit the new type, and the conversion rewrites the child object's org-wide default.
